Single Serve Peanut Butter Banana Bread

Step 1: Preheat your oven to 350°F (180°C) and lightly grease a single-serve baking dish or 8-ounce ramekin.

Step 2: In a mixing bowl, mash the banana until smooth. Then, whisk in the egg, milk, maple syrup (or honey), peanut butter, and vanilla extract until combined.

Step 3: Add the oat flour, baking powder, ground cinnamon, and salt to the wet ingredients. Stir until combined, but do not overmix. Optionally, fold in the chocolate chips.

Step 4: Pour the batter into the greased oven-safe ramekin. Drizzle with peanut butter and swirl through the top of the batter. Top with additional chocolate chips.

Step 5: Bake for 18 – 22 minutes or until a toothpick comes out clean.

Step 6: Allow banana bread to cool for at least minutes. Serve with another drizzle of peanut butter, a pad of butter, a dollop of yogurt, and/or fresh fruit. Enjoy your healthy dessert (no sharing necessary!)
