Red Velvet Banana Brownie Bars
I fear I did something here…. Ingredients • 2 ripe bananas, mashed • 1 egg • ¼ cup maple syrup • ¼ cup melted coconut oil or avocado oil • 1 tsp vanilla extract • 1 tsp apple cider vinegar (idk the science, but this helps w red velvet flavor) • ¾ cup oat flour • ¼ cup cocoa powder • 1½–2 tsp beet powder (optional, for color) • ½ tsp baking soda • ¼ tsp salt • ½–¾ cup dairy-free mini white chocolate chips Instructions 1. Preheat oven to 350°F and line an 8×8 pan with parchment. 2. Mash bananas in a bowl. 3. Mix in egg, maple syrup, oil, vanilla and apple cider vinegar. 4. Stir in oat flour, cocoa powder, beet powder, baking soda and salt until smooth. 5. Fold in mini white chocolate chips. 6. Spread into pan and smooth the top. 7. Bake 18–22 minutes, until just set in the center. 8. Let cool, then slice (they get fudgier as they sit). #bananabars #healthybrownies #redvelvet #bananabrownies #redvelvetbananabread
