Preheat oven to 350 degrees. Place 2 paper liners into two ramekins or a muffin pan. Whisk together oats and baking powder. In a separate bowl, whisk together pumpkin, peanut butter, and egg. Combine the dry ingredients into the wet and stir until well combined. Bake for 25 minutes or until a toothpick inserted comes out clean. Let them cool completely, and if needed, store in the fridge. (Optional: top one with whipped cream for an extra treat!)
