Another summery pineapple boat creation featuring shrimp and stir-fried vegetables, seasoned with sesame oil, salt, pepper, and coconut aminos, all served in a hollowed-out pineapple half.
1. Cut your pineapple in half and scoop out the middle (this can be challenging).
2. In a skillet, cook your favorite vegetables. The author uses sesame oil for flavor and a mix of Trader Joe’s frozen stir-fry vegetables (broccoli, snap peas, carrots, mushrooms, and water chestnuts), plus some additional fresh broccoli. Cook until the vegetables are soft.
3. Once the vegetables are soft, add and cook your shrimp (the author uses frozen shrimp from Trader Joe's).
4. Season the vegetables and shrimp with salt, pepper, and coconut aminos.
5. Cook until everything is done and all the coconut aminos are absorbed.
6. Stuff the cooked vegetables and shrimp into the hollowed-out pineapple boat.
7. Enjoy! Optionally, top with some more coconut aminos.
