These peanut butter oat balls are a family favorite snack, simple to make and customizable. The recipe can be doubled, and the oats can be ground into oat flour for a creamier, denser cookie dough texture, or kept whole based on preference.
Combine 1 1/2 cups of old fashioned oats, 1/2 cup of creamy peanut butter, 1/3 cup of honey or maple syrup, and 1/3 cup of chocolate chips in a bowl. A stand mixer is highly recommended for mixing as the dough can get tough.
At this point, you can optionally refrigerate the dough for a little while to make it less sticky and easier to shape. However, you can also start rolling immediately. Take about a tablespoon of dough and roll it into a ball. Place the finished balls in a tupperware. If the dough feels too sticky, add more oats. If it's not holding together, add more honey or maple syrup.
These cookie dough balls can be stored in the fridge or freezer. Enjoy!
