I fear I may use this phrase too often, but THIS may just be the best recipe I’ve ever made… These banana bread bars feature mix-ins like dairy-free chocolate chips, marshmallows, and granola for a delightful s'mores twist.
1. Preheat your oven to 350°F and line an 11x6 inch baking pan with parchment paper (any pan size will work just adjust bake time).
2. In a large mixing bowl, combine the mashed bananas, maple syrup or honey, melted coconut oil, and vanilla extract. Mix until smooth.
3. Add the oat flour, almond flour, baking soda, baking powder, and salt to the wet ingredients. Stir until well combined and a smooth batter forms.
4. Gently fold in the mini chocolate chips, marshmallow pieces, and campfire crunch granola.
5. Pour the batter into the prepared baking pan, spreading it out evenly. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
6. Allow the bars to cool in the pan for 10-15 minutes, then transfer them to a wire rack to cool completely before slicing into bars and ENJOY 🫶
