CRANBERRY CHIA JAM (I know i’m a little late with the cranberry recipes but this is for anyone who is anything like me & still has a ton of cranberries in the freezer that need to be used 🙃) • • INGREDIENTS: - 12 ounces cranberries, fresh or frozen (typically one bag) - 1/2 cup orange juice (could do apple juice too) - 1/2 cup water - 1/4 cup honey or maple syrup (more if you like it sweeter) - 1/2 teaspoon vanilla extract - 2 tablespoons chia seeds (i use @justaboutfoods_ ) • • INSTRUCTIONS: - In a small saucepan, combine cranberries, juice, water, honey/maple syrup, and vanilla extract - Let it come to a boil, and then cook (covered) for about 20 minutes stirring occasionally (you should see the cranberries begin to pop & the liquid reduce) - Once most of the liquid has absorbed, turn off heat, uncover and stir in chia seeds - Allow to cool completely then transfer to a sealed container for storage - I store mine in the freezer and then when i want to eat it just rinse a spoon under hot water and scoop it out and then microwave it! - It’s great to top on toast or waffles/pancakes or with fruit and really anything!!!!
