My sister and I were obseeeessed with them - so moist and delicious, so of course I had to make a healthier version featuring @Splenda new Magic Baker, a zero sugar baking blend (and no these are NOT just for kids lol) It was so easy to swap sugar for Splenda Magic Baker in this recipe because it tastes, bakes, and measures just like sugar! Pick it up at Walmart or on Amazon and see how delicious these are for yourself! @influenster What you’ll need: 🫐 1 cup gluten-free all-purpose flour 🫐 1/2 cup dairy free yogurt of choice 🫐 1/4 cup dairy free milk of choice 🫐 1 egg (or flax egg should work) 🫐 1/2 Splenda Magic Baker (or any granulated sweetener) 🫐 1 teaspoon vanilla extract 🫐 Pinch of salt 🫐 1/3 cup vegan butter, melted and cooled 🫐 1 tsp baking powder 🫐 1 tsp baking soda 🫐 1/2 cup frozen or fresh blueberries To make: 1. Preheat oven to 350 degrees and grease a mini muffin tray 2. In a large bowl, mix together egg, milk, @splenda, butter and vanilla 3. Add in the dry ingredients until combined 4. Fold in blueberries (try not to over mix) 5. Add about 2 tablespoons of batter to each muffin hole making them 3/4 full 6. Bake in oven for 15-20 minutes, let cool for a few minutes & enjoy!
