Preheat the oven to 350 degrees Fahrenheit and spray/line a loaf pan. In a large bowl, whisk together the dry ingredients (flour, coconut sugar, baking powder, baking soda, salt) and then add in the remaining wet ingredients (vanilla extract, maple syrup, coconut yogurt, almond milk, cashew butter), stirring until a thick batter forms. Try not to overmix and set aside. Meanwhile, make the streusel by adding all the streusel ingredients (gf flour, coconut sugar, cinnamon, chopped walnuts, softened coconut oil, vanilla extract) together in a bowl with your hands or a fork until little pieces of the coconut oil are visible, but the mixture is still totally combined. Pour half of the cake batter into your pan and then layer half of the streusel mix over that. Repeat with the other half of the batter, topping it with the remaining streusel. Bake for 1 hour or until a toothpick inserted into the center comes out clean. Allow to cool completely before slicing and enjoying. Store the loaf in the fridge.
